作者序 2005年華杏出版機構蕭先生登門拜訪我們時，詢及是否能夠撰寫《餐旅專業英語──餐飲篇》的教科書。起初覺得有些惶恐，雖然我從事英語教學已超過10年、芝澐老師在餐旅領域亦學有專精，然而針對餐旅從業人員的需求撰寫專屬英文教材，確實是一大考驗。因此我倆便利用課餘閒暇的時間，進行此次編寫英文教科書的探討與企劃。本人的學術專精於英文教學，而楊老師具有多年的餐旅教學和實務經驗，因此我們希望可藉由兩人不同專業的跨領域合作，撰寫出適合大學部及技術學院餐旅系或觀光系學生的教材。 本書共分成十一章，內容分別為緒論、訂位、接待與安排客人入座、餐桌上、為客人點餐、上菜、處理顧客抱怨、結帳、早餐及午餐、風味餐廳的用餐、飲料服務，主題編排按照餐廳從業人員在實際工作場合可能遇到的情形，編寫實例對話。每單元內容涵蓋了：基礎字彙、句型、文法解析以及各種溝通式課後練習，如聽力練習和角色扮演等，讓學生獲得大量聽、說、表達與討論的機會。此外每章節提供文化小語， 讓學習者除了學習英文之外，也能獲得相關餐飲文化的資訊。本書除了介紹歐美餐飲業之專業英文外，在附錄部分同時收錄了常用餐飲詞彙，包括廚具、烹調法及切法、對食物的形容詞；常見中式料理英譯，如：北方料理、四川料理、台灣小吃等內容，成為一本結合國際化和本土實例的餐旅英文書。 這本書歷經二年完成，十分感謝許多人的幫忙。包括：陳怡珊老師、鄭新讚老師、鄭文綺老師、陳姿秀老師和許多協助資料整理打字的學生，以及華杏出版機構編輯部的整編建議與校對，讓本書能順利出版。 最後要感謝我們的家人──爸爸、媽媽、彬芳、國修、盟閔、堉恩、美杏、麗夙，有你們在精神上的支持與鼓勵， 使我們無後顧之憂完成此一作品。在此向你們致上最誠摯的謝意。拙作膚淺謬誤在所難免，祈望各界先進不吝指正。謹以此獻給我們最親愛的家人及所有陪我們走過的朋友陳美伶 楊芝澐 謹誌2007年6月
